Cajun Beef Dishes Cajun Rolled Steak 1 lg. round steak 1 lg. onion, sliced 1 lg. bell pepper, sliced 3 ribs celery, cut in round 1/2 cup olive oil 1/2 cup fresh mushrooms, sliced water salt, cayenne pepper and garlic powder to taste string Season round steak well. Spread sliced onion, bell pepper, celery and mushrooms evenly on steak. Roll like a jelly roll; tie with string. Using an iron skillet, place 1/2 cup olive oil and steak; brown on medium heat, adding water little at a time. Cook covered 1 hour or til tender. Add extra seasoning to gravy if desired. Slice and serve over hot rice. Yield: 6 or 8 servings Note: Extra vegtables may be added to pot when covered.
